Ingredients
- 6 slices Nueske's Applewood Smoked Bacon
- 1 Tbsp bacon fat, reserved from cooking the bacon
- 1 Cup chopped nuts
- 10 cups popped popcorn (about 1/2 cup unpopped kernels)
- 1/4 tsp salt, optional
- Maple Caramel Sauce
- 1 Cup salted Butter
- 1/2 Cup maple syrup
- 2 Cups dark brown sugar
- 1 tsp salt
- 1 tsp Madagascar Bourbon vanilla
- 1 Tbsp molasses
- 1/2 tsp Vietnamese cinnamon
- 1/2 tsp baking soda
Method
- Preheat oven to 275 degrees. Line a baking sheet with parchment paper or a silicone baking mat.
- Cook the bacon in a skillet until crisp, then remove from the skillet and let it drain on paper towels. Once cooled, crumble the bacon into small pieces.

- Make the Maple Caramel Sauce: In a medium saucepan, combine the butter, brown sugar, and maple syrup. Cook over medium heat, stirring occasionally, until the butter is melted and the sugar is dissolved. Bring the mixture to a boil, then let it boil for about 2-3 minutes, stirring constantly. Reduce heat and add the salt, vanilla, molasses, cinnamon and baking soda. Add the bacon and nuts to the mixture too. Mix well.
- Pour the hot caramel sauce over the popcorn in the baking pan and gently stir with a spatula or wooden spoon to coat evenly.
- Bake in preheated oven for 30 minutes, stirring occasionally.
- After baking, remove from oven and let it cool on the baking sheet. It will harden as it cools.
- Once cooled, break the caramel corn apart into clusters.
- Serve the maple bacon caramel corn as a sweet and savory snack. Store any leftovers in an airtight container.
