Ingredients

  • 6 slices Nueske's Applewood Smoked Bacon
  • 1 Tbsp bacon fat, reserved from cooking the bacon
  • 1 Cup chopped nuts
  • 10 cups popped popcorn (about 1/2 cup unpopped kernels)
  • 1/4 tsp salt, optional
  • Maple Caramel Sauce
  • 1 Cup salted Butter
  • 1/2 Cup maple syrup
  • 2 Cups dark brown sugar
  • 1 tsp salt
  • 1 tsp Madagascar Bourbon vanilla
  • 1 Tbsp molasses
  • 1/2 tsp Vietnamese cinnamon
  • 1/2 tsp baking soda

Method

  1. Preheat oven to 275 degrees. Line a baking sheet with parchment paper or a silicone baking mat.
  2. Cook the bacon in a skillet until crisp, then remove from the skillet and let it drain on paper towels. Once cooled, crumble the bacon into small pieces.

  4. Make the Maple Caramel Sauce: In a medium saucepan, combine the butter, brown sugar, and maple syrup. Cook over medium heat, stirring occasionally, until the butter is melted and the sugar is dissolved. Bring the mixture to a boil, then let it boil for about 2-3 minutes, stirring constantly. Reduce heat and add the salt, vanilla, molasses, cinnamon and baking soda. Add the bacon and nuts to the mixture too. Mix well.
  5. Pour the hot caramel sauce over the popcorn in the baking pan and gently stir with a spatula or wooden spoon to coat evenly.
  6. Bake in preheated oven for 30 minutes, stirring occasionally.
  7. After baking, remove from oven and let it cool on the baking sheet. It will harden as it cools.
  8. Once cooled, break the caramel corn apart into clusters.
  9. Serve the maple bacon caramel corn as a sweet and savory snack. Store any leftovers in an airtight container.
