Ingredients
- 1/2 Loaf Focaccia Bread
- Pimento Spread:
- 2 1/2 Cups Cheddar Cheese brick
- 1/2 Cup Mayo
- 4 oz Pimento Peppers
- 4 oz Cream Cheese
- 1 tsp Black Pepper
- 1 Tbsp Kosher Salt
- 1 tsp Onion Powder
- 2 tsp Garlic Powder
- 1/2 Tbsp Worcestershire Sauce
- 1/4 Cup Parmesan Cheese
- Bacon Jam:
- 2 lbs Nueske’s Applewood Smoked Bacon, fully cooked and drained
- 1 Cup Yellow Onion
- 10 oz Maple Syrup
- 1 Tbsp Kosher Salt
- 1/4 Cup Balsamic Vinegar
- 1/2 Cup Brown Sugar
- 1/4 tsp Black Pepper
- 2 Tbsp Fresh Garlic
- 1/2 Tbsp Worcestershire
Method
- Pimento Spread 1. Let all ingredients sit out at room temp for 1 hour prior to mixing to soften. 2. Combine all in standing mixer and whip.
- Bacon Jam 1. Heat 4oz butter in stockpot, cube bacon into 1/2-inch pieces. 2. Sauté bacon until fat is rendered and bacon is 1/2 cooked. Add onion. Caramelize. 3. Add all other ingredients, bring to a boil. 4. Reduce to a simmer- reduce by half. 5. Pulse in food processor until desired consistency-small chunks, not liquified. 6. Combine on 2 inch long, 1-inch-wide pieces of focaccia bread.
- Assembly: Cut focaccia bread (½ loaf) into finger length pieces, melt butter in pan, and toast focaccia. Place on plate, add pimento spread as a base layer, bacon jam on top, and garnish with half sweet & spicy cocktail pickle & chive.
