Smoked Turkey and Roasted Corn Salsa

  • 3 cobs of corn, roasted
  • 1 Tbsp vegetable oil
  • 1/2 cup onion, finely chopped
  • 2 small serrano chili pepper, seeded and finely chopped
  • 4 Roma tomatoes, cored and chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 cup Nueske's Smoked Turkey, diced 1/4 inch
  • 2 Tbsp lime juice


  1. Roast cobs corn on grill after removing husks and silks.
  2. Cool and remove corn kernels from cob. Makes about 1 1/2 c. corn.
  3. Mix corn with remaining ingredients.
  4. Serve with tortilla chips.
