Ingredients

  • 1 Can (8 oz) water chestnuts, sliced in thin strips
  • 1 1/2 Cups Nueske's Smoked Turkey, cubed 1/2 inch
  • 1/2 Cup pitted black olives
  • 1 Cup red bell pepper, diced
  • 4 Cups (1/2 head) Romaine lettuce, torn in pieces
  • 2 Tbsp green onion, chopped
  • Dressing
  • 1/2 Cup vegetable oil
  • 3 Tbsp wine or cider vinegar
  • 1/2 tsp ground ginger
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 tsp soy sauce
  • 3 eggs hard boiled and peeled and quartered lengthwise
  • 1/4 Cup slivered almonds

Method

  1. Combine dressing with water chestnuts, smoked turkey, olives and bell pepper.
  2. Refrigerate for 2 hours or more.
  3. When ready to serve, toss water chestnut/turkey mixture with the lettuce mixture.
  4. Garnish with the eggs and slivered almonds.
