Summer Sausage Frittatas

  • 3/4 C. cooked rice (prepared ahead)
  • 2 Tbsp. butter
  • 6 eggs, slightly beaten
  • 1/4 tsp. pepper
  • 1 Tbsp fresh basil
  • 1/2 C. Gruyere cheese, shredded
  • 1 C. Nueske's Summer Sausage, julienne sliced
  • 1/4 C. onion, finely diced
  • cherry tomatoes and fresh basil for garnish


Preheat broiler In medium skillet melt butter. Add the eggs, pepper and basil. Spoon the rice, cheese, summer sausage and onion over the egg mixture. Reduce the heat to low. Lift the egg mixture with spatula to allow uncooked portion to flow underneath. When the eggs are set, place under the broiler to brown slightly, if desired. Cut into wedges and garnish with cherry tomatoes and basil.
